Our coconut sugar is made from the nectar of the coconut blossoms. Our coconut blossom sugar has slightly more floral and fruity flavor notes
We consider it a better alternative to refined sugars, but certainly not considered "healthy". We'd say it's more of a neutral food, and whilst we can recommend "DON'T HAVE ANY SUGAR", we also can say, choose the middle and balanced path in life.
It's been a long process in taking coconut sugar into our bulk foods range, going from the side of not promoting any forms of refined sugar, to also allowing people their own choices, having a gentle step by step approach with topics sugar as sugar.
Coconut sugar is at the end of the day, much less refined that normal store bought sugar, and more natural and direct from source. But it's still a refined sugar, and your body doesn't handle excess quantities of it very well. We still recommend trying to use as little refined sugars in your diet as possible, and instead eat fruits, use other sweeteners - such as mesquite, dates, etc. Using small amounts of honey is great when in balance, really acknowledging the bees work in getting it onto your table, treating it with respect and gratitude, and using it as a treat, rather than lumping teaspoons into your tea or coffee.
Remember, sugar is highly addictive too, and truly a creation of man's excessive greed and gluttonous behavior on this planet. Try weaning yourself off sugar and going back to tasting the real essence of the things you are eating and drinking. Making a cake or treat doesn't have to be unhealthy, be creative! Use date syrup, bananas, mesquite, fruit - its' really possible!
